Black Risotto: The Dalmatian Classic That Defines Our Table

Black risotto (crni rižot) is one of the most iconic dishes of Dalmatian cuisine, and at Lvxor we prepare it following a traditional recipe passed down for generations along the Adriatic coast. Its dark, almost black color comes from cuttlefish ink, which tints the rice and gives it a distinctive, faintly briny taste of the sea.
A proper black risotto takes time and patience — the rice is slowly cooked while fish stock is gradually added, together with cuttlefish and often mussels or prawns, until the grains reach a creamy, al dente texture. We serve ours in a stone bowl, finished with fresh young peas, ideally alongside a glass of chilled Malvazija or Pošip.
Originating in fishing families along the Dalmatian coast, this dish was once a way to use every part of the catch — today it's one of the most requested specialties among guests looking to taste authentic Dalmatian cooking right on Peristil Square.
